If you’re familiar with two of Surry Hills’ most loved restaurants Arthur and Jane, you’ll be over the moon to hear that the pair behind them are bringing their tastebuds to the Shire with a completely revamped space at the old Caruso’s site in Gymea – you won’t believe the transformation.
Fior is run by Tristan Rosier and Rebecca Fanning and will offer a modern Aussie riff on traditional Italian cuisine. With a focus on the best of local produce and local suppliers, diners can expect a constantly evolving list of antipasti, pasta made in front of their eyes, oysters freshly shucked to order, a roaming gelato trolley with ever changing flavours, and “the Shire’s best aperitivo hour” – with $2 Sydney Rock Oysters every day from 4pm to 5pm along with a range of other Aperitivo essentials.
Curated by Eduardo Conde, current Diageo World Class Bartender of the year, the cocktail list and aperitivo offering include playful remixes of Italian classics – perfect for a girls’ night out, a long lunch or that long-awaited date night.
The recent opening of Fior holds significant importance for chef Tristan Rosier who grew up in the Shire and has always dreamt of opening a restaurant on home turf.
With a venue that caters to a variety of dining and drinking experiences for large groups and small (think weddings, anniversaries and birthdays too!), we think Fior is set to become the new foodie favourite in the Shire!
