Banana Pancakes

- 1 cup plain flour
- 3 ripe bananas
- 3 eggs
- 1 ½ cups almond milk
- 2 tbs hemp seeds (optional)
- 1 tsp cinnamon (optional)
Instructions
- Mash the bananas into a large mixing bowl, add flour, eggs, almond milk, hemp seeds, and cinnamon and whisk together until smooth.
- In a large frying pan, add a small amount of oil and spread to make a thin layer. wait until pan is hot and add spoons of pancake mix approx. 10cm x 10cm in size.
- The first few will always be the worst (I usually snack on these while cooking :)) there’s no need to add further oil between batches if you have a good non-stick pan, this will create that lovely golden colour we all love.
- Serve with greek yoghurt (or coconut yoghurt if your bubs is dairy free) and fresh fruit! Yum!
Notes
This recipe makes approx. 50 little baby cakes (we all eat them together for breakfast, and then I like to have a few left over in the fridge for later. If that’s too many for you, just halve all the ingredients.
Choose seasonal fruits to serve - kiwi, strawberries, blueberries, passionfruit, figs, raspberries and mango are some of our favourites.
Keep whatever is leftover in the fridge for snacks, or breakfast again the next day.
You can totally freeze these, just add a layer of baking paper between them so they are easy thaw in portions.
