- ½ cup sour cream
- 1 cup zucchini (grated)
- 1 tbs chia seeds
- ½ cup tasty cheese (shredded)
- 1 tsp dried rosemary
- ½ tsp dried sage
Instructions
- Preheat fanforced oven to 180°C. Combine dry ingredients in a bowl (flour, baking powder, bi-carb soda, chia, rosemary and sage) mix well. Create a well in the center of the bowl.
- In a separate bowl, crack egg and add sour cream. Whisk to combine. Add to dry ingredients. Add zucchini and cheese. Fold lightly to combine.
- Sprinkle a little plain flour on your workspace and knead dough until it holds together. Don’t work it too much. You may need extra flour to prevent the dough sticking to your hands.
- Shape into an oval and transfer onto a tray lined with baking paper. Cook for 25mins or until golden. Allow to cool. Serve with a little butter for extra yumminess!
Notes
This loaf is BLW friendly! Just be sure your baby has tried all ingredients individually prior to serving incase of allergy. Cut the loaf into finger width rectangles. Serve with a little (real) butter if you like.
Toddlers love exploring foods when they are different. Try serving the knobby end piece for a snack. Or serve as toast for brekky with an egg. This loaf is extra delicious toasted, you can add avo on top too. Yum!
Freeze for later
Hello, pre-prepared snack on the go. You can most certainly freeze this loaf for another day. You could even double or triple the ingredients and store away - they don't last long. Simply freeze the entire loaf, or cut into slices and seal with a Ziploc bag.
Perfect for sharing
This yummy loaf is also a perfect little token to bring to a friends place for afternoon or morning tea. Adults will love it as much as babes. Also, a great homemade treat to bring to parents in newborn bubbles (take multiple frozen ones for extra points!).
