Paprika Parmesan Chicken Bites

- Crumb:
- 1 cup breadcrumbs
- ½ cup parmesan (grated)
- 2 tsp sweet paprika
- 2 tsp oregano
- Coat:
- 4 eggs (beaten)
- 1 cup all purpose flour
- Chicken filling:
- 500g chicken mince
- 1 egg yolk
- ¼ cup bread crumbs
- ¼ cup parmesan (grated)
- ¼ onion (diced)
- 1 tsp garlic (minced)
- 1 tsp sweet paprika
Instructions
- Prepare three bowls for the crumb & coat mixtures. Add flour to the first bowl. Add the eggs and beat until combined to the second bowl. Combine the crumb ingredients in the third bowl.
- Add chicken mince, egg yolk, bread crumbs, parmesan, onion, garlic and paprika to a medium sized mixing bowl and stir until combined.
- Shape the chicken mixture into bite sized balls, drop into the flour bowl, coat thoroughly, then drop to the egg mix, coat thoroughly, finally drop into the crumb mix and coat thoroughly. Repeat until done.
- Add a drizzle of desired oil to the frypan and cook on med-high until golden. Lay them on a paper towel to absorb excess oil before serving/storing.
Notes
Store in an airtight container in the fridge and consume within 3 days.
They are freezer friendly! Our chicken bites (cooked) will store in the freezer for 2-3 months. Allow them to cool completely before storing in a freezer bag. Do not reheat more than once after freezing.
They are delicious with a healthy dipping sauce!
Toddler friendly, best for babies over 12+ months, however if you have a confident eater you can serve younger, just be sure they have tried all ingredients individually before serving together.
