Sweet Potato & Chicken Quinoa

- 1 medium sweet potato (grated)
- 2 carrots (grated)
- 6-8 mushrooms (finely diced
- 1 medium broccoli (finely diced)
- ½ bottle Mutti Passata sauce (we like the one with basil)
- handful of basil leaves (finely diced)
- 1 can of crushed tomato
- 2 chicken breast
- 1 cup quinoa
- 1 cup brown rice
- Or you can totally use ready made quinoa/brown rice packet like I did, cause - mum life
Instructions
- Cook chicken on the stovetop first, add harder veggies, cook until tender, then add the rest of the ingredients and stir together.
Notes
Best serve 12mths+ for this one, or until your babe is confidently eating and chewing. The Mutti Passata is also higher in sodium.
If you’d like an option for a younger confident eater, you can definitely still serve this one, just ensure mushrooms and broccoli are at an appropriate size and cut the chicken in larger strips so your baby can navigate it easier!
It’s ok to serve babies sauces that are a little higher in sodium occasionally. Just monitor their daily intake and make sure you’re not regularly going over the recommend advice. Babies kidneys cannot process salts like adults can, so it’s really important to keep an eye on it - don’t stress over it, but definitely be aware and educated
